Celiac Disease is the inability to digest the gluten in wheat, rye, triticale, barley or oats. It is not the same as the gluten in corn or rice.
Eating foods with gluten damages the lining of the small intestine. Since this is where food is digested and absorbed, the body doesn't get any nutrients.
A strict, gluten-free diet is the only way to control this condition. Without the special diet, sufferers can develop anemia, bone problems, or even nerve damage.
